First, here’s a short rundown on the 40-step manufacturing process. The Henckels Twin Signature series of knives is stamped from a single piece of high carbon German stainless steel. This results in a lighter weight knife that doesn’t sacrifice durability or sharpness. They go through what Zwilling calls their “Friodur process” in which the steel is heated to 1832 degrees Fahrenheit, and then cooled to -94 Fahrenheit. Finally, the knives are reheated to 482 degrees. Henckels tells us, “the result is a harder, sharper blade that will not stain or chip and remains sharp longer.”
Finally, the full tang is then bonded and triple riveted to an ergonomic polymer handle. The hand feel on these is fantastic. Additionally, they are seamless which virtually eliminates the risk of contamination. The blades have a laser controlled edge that ensure the ideal cutting edge for sharpness and durability.
